A Vegan Recipe Might Be Just What You Need
I was a vegan in college for about 2 weeks. It was only 2 weeks because if you’ve gone to college, you know how logistically difficult it can be to eat healthy. Now I love a good vegan recipe! Especially pasta.
It’s (almost) right up there with pizza for me.
The only problem is my diet and lifestyle. Well it’s not really a problem, it’s more of a safety precaution. Eating pasta is difficult for me to eat like I want to because pasta:
A. I don’t receive dairy in abundance well
B. The acidic buildup can be fatal over time (more on that later)
C. The fatigue factor can be too much, especially if I have too much to do that day.
D. The heaviness of too much pasta can have an effect on BMs at times.
I should mention…
You Do NOT need to be a vegan to enjoy vegan dishes. And, while we’re on the subject, you don’t have to be a vegetarian to enjoy vegetarian dishes either (think that through).
I was a vegan for 2 weeks in college and a vegetarian for 10 years stemming from high school. It’s possible that those years had a lot to do with why I’m told I look so young now. I can tell you that I experienced some of the best food of my life.
My point is, for you meat eaters (like I am now, sometimes), I’d like you to be open this vegan recipe I found.
It’s for Vegan Creamy Spicy Sun Dried Tomato Pasta. This particular recipe comes from Amy Le creations and it’s Incredible!
I had it over the weekend and I think you will love it. Try it out and let me know what you think!
